Fried Corn **** 12/95

6 large ears of corn
4 tablespoon bacon drippings
1/2 cup milk
1 green pepper; chopped
1 salt & pepper to taste

Slice kernels from corn and scrape the cob to obtain all the corn "milk". In a large, heavy skillet, melt the bacon grease over medium heat. Add corn and chopped green pepper. Saute for several minutes. Cover and cook slowly for about 20 minutes, stirring frequently. If corn begins to stick, add 1/2 cup milk. The natural sugar in corn makes it easy to burn, so frequent stirring is a must. Add salt and pepper to taste.

Yield: 6 servings
