Stuffing Muffins #905 12/08

1 tablespoon Butter
1 1/2 cups onion; chopped
1 1/2 cups celery; chopped
1 8 oz Pck cornbread stuffing mix
1 1/4 cup chicken broth
1/4 cup canned creamed corn
1/4 teaspoon pepper
1/2 teaspoon sage
1/2 teaspoon thyme
1 large egg; beaten
Preheat oven to 400°F. Pam 12 muffin cups. In a large skillet over medium-high heat, melt the butter. Add onion and celery and cook until soft, 6 to 8 minutes. In a large bowl, combine the stuffing mix, broth, creamed corn, salt, pepper, sage, thyme, and egg. Stir in the onioin mixture. Spoon the mixture into the prepared muffin tins. Bake for 30 minutes.
