Chicken au Gratin 3/01 #562

3 tablespoon butter
3 tablespoon flour
1 cup milk
1/2 cup heavy cream
2 teaspoon dijon mustard
1 teaspoon tarragon
1/2 teaspoon salt
1/4 teaspoon pepper
2 cup cooked chicken; chopped
1/4 cup shredded swiss cheese
1 slice bread; processed into crumbs
1 1/2 tablespoon butter; melted

Make a sauce by cooking the butter and flour. Add milk half at a time, stirring constantly. Add cream, mustard, tarragon, salt, and pepper. Cook and stir until smooth and thickened. Add the chicken pieces and put into a 1 quart casserole that has been sprayed with Pam. Sprinkle the cheese on top. Mix the melted butter and breadcrumbs together and sprinkle on top. Bake at 400 degrees for 20 minutes. You can also serve this over rice or couscous.
