1 cup whipping cream
2 tablespoon buttermilk

Try to find cream that is pasteurized rather than ultra pasteurized. It takes longer to thicken with the ultra. Combine the cream and buttermilk in a glass container. Cover and let stand at room temperature (about 70°F) from 8 to 24 hours or until very thick. (48 hours for Ultra pasteurized). Stir well before covering and refrigerate for up to 10 ten days. We put ours in the oven to cure.
