Pierogi Casserole #964 11/11

2 1/2 potatoes; peeled and cubed
1/4 cup milk
1/4 cup Butter; melted
1/4 lb bacon; diced
1/2 onion; chopped
3 clove garlic; minced
4 oz lasagna noodles; cooked
1 cup cheddar cheese; shredded
salt and pepper to taste
sour cream
chives; chopped

Preheat oven to 350°F. Boil the potatoes until done; drain. Put potatoes in mixing bowl, mash with beater, add milk and 3 TB of the butter. Season with salt and pepper. Mix and set aside. Melt the remaining TB butter in a large skillet over medium high heat. Saute the bacon until about half done, then add onion and garlic and cook until bacon is done. Place half of the mashed potatoes into the bottom of an 8 X 8 inch baking dish. Top this with one third of the cheese and a layer of noodles. Repeat this with half of the remaining potatoes, another one third of the cheese and a layer of noodles. Then arrange the bacon mixture over the noodles, then a final layer of potatoes and finally top with the remaining cheese. Bake uncovered for 45 minutes or until thte cheese is melted and bubbly. Serve with sour cream and chives. This has been changed from the original so you may have to experiment with with the amount of potatoes you use.
