2 cup corn kernels cut from cob
1 egg; slightly beaten
1/2 cup milk
5 1/2 oz self rising flour (1 1/2 cup
Heat about 1 or 2 inches oil in an electric fryer to 375 degrees. Cook some corn on the cob and cut off two cups of kernels. Combine remaining ingredients in a medium bowl. Fold in corn. Drop by teaspoonsfull into hot oil. Fry until deep golden brown, Drain on paper towels. Serve warm with syrup.
Yield: 24 fritters
