Pork Chop & Baked Bean Caserole **** 10\95 Rev. 8/06

2 center cut pork chops; thick
1 tablespoon oil
3 16 oz can baked beans
1/4 cup apple juice
2 Braeburn apple; peeled and sliced
cinnamon sugar

Salt and pepper chops. In a cast iron skillet (Big Red), brown chops evenly in oil. Remove to paper towels. Pour beans into skillet and place chops on top. Do not drain beans. Bake in a 350 degree oven for about 1 1/4 hours, covered. Baste the chops with the apple juice. Arrange the apple slices on top and sprinkle with cinnamon sugar. Bake an additional 15 minutes. This revision added the extra can of baked beans. We also added more apples. This was also good with Country Style pork ribs. The 5/06 revision substituted apple juice for the apple jelly. The 8/06 revision added the 2nd apple. Also, you can put this in a lot earlier and cook it for much longer. Reduce heat or turn it off and let stay in oven.
