Cheese Ravioli 8/11 #962

+++++DOUGH+++++
2 1/2 cups flour
1/2 teaspoon Salt
1 egg; room temperature
1/2 cup sour cream
1/4 cup Butter; melted
1 teaspoon Baking Powder
1 egg; slightly beaten
salt and pepper to taste
+++++FILLING+++++
1/3 lb ricotta cheese
1/4 lb gruyere cheese; grated
1 tablespoon parmesan cheese; grated
1/4 teaspoon nutmeg; ground
salt and pepper to taste
2 large eggs; slightly beaten
1/4 teaspoon nutmeg
salt end pepper to taste
+++++DOUGH+++++ Have all ingredients at room temperature. Sift flour, salt, and baking powder together. Whisk egg, sour cream and butter together. Make a well in the flour mix, add wet eingredients, mix by hand until it forms a soft ball. Wrap with plastic and let rest for ten minutes. Roll dough out to a rectangle and run through your pasta machine and then the ravioli press. +++++FILLING+++++ In another bowl, mix together ricotta, gruyere, parmesan, eggs, nutmeg, and salt and pepper. Make ravioli in the press. Cook ten at a time in salted boiling water for 8 minutes, turning over once. Serve this with a tomato or alfredo sauce.
