Butterscotch Sauce 8/11 #960

1/2 cup Butter
1 cup brown sugar
2/3 cup whipping cream
1 teaspoon vanilla
Melt the butter in a small saucepan over medium heat. Add the brown sugar. Stir until dissolved. Bring to a boil. Cook 5 minutes. Remove from heat. Carefully add the cream; sauce will bubble vigorously. Place pan over low heat. Stir until smooth. Stir in vanilla. Cool slightly before serving. Keep this sauce in the fridge for up to a week. Bring to room temperature or heat in microwave for 20 to 30 seconds. This is particularly good on vanilla ice cream but try it on chocolate ice cream also.
