Hominy Pie **** 9/97

3/4 lb ground chuck
1/2 onion; chopped
1 1/2 tablespoon butter
1/2 green bell pepper; chopped
1 clove garlic; chopped
1 tablespoon flour
14 oz can diced tomatoes
1/2 tablespoon chili powder
1 pinch of sugar
1 salt and pepper to taste
16 oz can hominy; drained
4 oz shredded cheese

Brown beef and onion in butter, stirring to crumble. Add bell pepper and garlic. Sprinkle flour over beef mixture. Stir in tomatoes, salt, pepper, chili powder, and sugar. Simmer, covered, to blend flavors, stirring often. Add hominy to sauce. Pour mixture into a 1 1/2 qt. casserole and sprinkle with cheese. Bake at 350 for 50 minutes. 2/07. Made a pie crust in a 9 inch pie dish and poured this stuff in after I prebaked the crust. Did not quite hold it all. A 10 inch dish would have. This is the way to go. Also served up a dollop of sour cream with it.
