Mom's Meatlloaf 2/04 #684

3/4 lb ground beef
3/4 lb ground pork
1/2 onion; finely chopped
3/4 cup fresh bread crumbs
2 eggs
1/4 cup ketchup
2 teaspoon parsley
1/2 teaspoon salt
1/8 teaspoon pepper -----SAUCE-----
1 cup ketchup
1/2 cup brown sugar
1 teaspoon worcestershire sauce
sauteed onions

Preheat oven to 375. In a large bowl combine beef, pork, bread crumbs, eggs, the 1/4 cup ketchup, onion, parsley and pepper. Mix until blended. Shape into loaf. Meanwhile, in a small bowl, stir together the sauce ingredients. Put some foil on a cookie tin, and place meatloaf on it on top of a couple pieces of bread ( the bread will catch the grease). Bake 45 minutes. Drain. Spread 3/4 cup of the sauce over meat loaf. Bake 30 minutes longer. Serve with remaining sauce. Try imbedding cheese sticks in the loaf. See recipe in drawer. 7/20/11 Sauteed some onions in butter and added to the sauce. Excellent!
