1 1/2 lb ground beef
2 eggs
1/2 cup seasoned bread crumbs
1/4 teaspoon salt
1 onion; chopped
1/4 teaspoon pepper
16 oz jar tomato salsa; divided
10 oz frozen chopped broccoli
1 thawed and squeezed dry

2 lb potatoes; peeled & chunked
1/2 cup hot milk
3 tablespoon butter
1 teaspoon salt
1/2 teaspoon pepper
Preheat oven to 350. In a large bowl, combine beef, eggs, bread crumbs, salt, pepper, onion, and half of the salsa. Spread half of the mixture into a 9" pie plate. In another bowl, combine the broccoli and two cups of mashed potatoes. Spread on the ground beef and top with remaining meat mixture. Top with reserved mashed potatoes using a pastry bag fitted with a star tip. Top with remaining salsa. Bake 1 hour or until meat is no longer pink. Let stand for ten minutes before cutting innto wedges and serving.
Mashed Potatoes. Boil potatoes in salted water for 15 minutes or until tender; drain and mash. Gradually add milk, butter, salt and pepper.
Yield: 5 servings
