Impossible Cheesecake 10/98

3/4 cup milk
2 teaspoon vanilla
2 eggs
1 cup sugar
1/2 cup bisquick
2 8 oz. cream cheese, softened
1 fresh raspberries ----CHEESECAKE TOPPING**********---
1 cup sour cream
2 tablespoon sugar
2 teaspoon vanilla

Heat oven to 350 degrees. Grease a 9" pie plate. Beat milk, vanilla, eggs, sugar, and baking mix in a mixer for 15 seconds on high. Add cream cheese. Beat on high for 2 minutes. Pour into pie plate, and bake uncovered for 50 to 60 minutes or until a knife inserted in the center comes out clean. Cool. Spread topping carefully over top. Refrigerate until ready to serve. Top with raspberries that have been marinated in Cointreau and sugar. 7/3/2011 Took some frozen blueberries with a little Cointreau and sugar. Heated to a simmer, cooked for a while, thickened with some corn starch and water. Used this instead of the raspberries. Topping: Mix all ingredients together.

Yield: 8 servings
