Chicken Croquettes **** 10/97

3 tablespoon butter
1/4 cup flour
1/2 cup milk
1/2 cup chicken broth
1 tablespoon parsley
1 teaspoon grated onion
1 teaspoon lemon juice
1/8 teaspoon each paprika, pepper, nutmeg
1/4 teaspoon salt
1 1/2 cup chicken; cooked,finely diced
3/4 cup dry bread crumbs
1 egg; beaten
2 tablespoon water

Melt butter in a saucepan, blend in flour; gradually blend in milk and broth, stirring constantly. Cook and stir till mixture bubbles; Cook and stir 1 minute longer. Add parsley, lemon juice, onion, and seasonings. Cool. Add chicken, salt to taste. Chill. With wet hands, shape the chicken mixture into nine balls, about 3 TB each. Roll in crumbs. Shape balls into cones, handling lightly so crumbs remain on outside. Dip into mixture of egg and water; roll in crumbs again. Fry in deep hot fat 375 degrees for 2 to 3 minutes or until golden brown and hot through. Drain on paper towels. Serve with Creamed Peas and Onions poured over top.

Yield: 3 servings
