Waffles & Creamed Dried Beef #828 4/07

------Dried Beef-----
4.5 oz jar dried beef; chopped
2 tablespoon Shortening
1/4 cup flour
2 cups milk
------Waffles------
1 cups flour
1/4 teaspoon baking soda
1/2 teaspoon Salt
1 1/2 tablespoon Sugar
1 1/2 eggs; beaten
2 tablespoon Butter; melted
1 cup buttermilk; room temperature
Creamed dry beef: Brown the dried beef lightly in shortening. Add flour and mix well and cook for 1 or 2 minutes. Add some butter if it gets too dry. Add milk, stirring constantly until thickened. Cook until heated through. Waffles: In a medium bowl whisk together the flour, soda, baking powder, salt, and sugar. In another bowl beat together the eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes. Ladle the batter onto the waffle iron. Cook until golden on both sides. Put waffles on plates and cover with the creamed dried beef. You could pour some maple syrup over this if desired. Top with some pepper. 3/11 Served this with some applesauce and it was excellent.
