Breakfast Pies #932 11/09

3/4 lb bulk breakfast sausage
1/4 cup onion; minced
1/4 cup green bell pepper; minced
1 12 oz can biscuit dough
3 large eggs; beaten
3 tablespoon milk
1 cup shredded cheddar cheese
1 tablespoon chopped chives
1/2 cup sour cream
3 tablespoon granulated sugar

Preheat oven to 400°F. In a large deep skillet over medium high heat, combine sausage, onion, and green pepper. Cook until sausage is evenly brown. Drain, crumble and set side. Generously butter up the custard cups. Separate the dough into 8 individual biscuits. These cans hold ten biscuits so just use the extra two for something else. Flatten each bisuit out, then line the bottom and sides of 8 small custard cups 3 1/2" wide X 1 1/4" deep. Evenly distribute the sausage mixture between the cups. Mix together the eggs, milk, and chives and divide between the cups. Sprinkle tops with shredded cheese. Bake for 18 to 20 minutes. If you are not going to eat all of these today, bake them all but leave the cheese off the ones you are going to save. Add it when you reheat them. You could serve these with a little maple syrup if desired. 3/15/10 Served these with a mixture of 1/2 cup sour cream and 3 TB granulated sugar. Great.
