French Onion Soup **** 9/94

3 1/2 yellow onions; sliced
2 3/4 tablespoon butter
2/3 teaspoon sugar
2 teaspoon flour
3/4 cup sauvignon blanc wine
3 cups beef stock
fontina cheese; diced
croutons to serve
In a dutch oven brown the onions in butter and sugar until the onions are dark brown, about 30 minutes. With a wooden spoon, accasionally scrape the brown off the bottom of the pan. Add flour and cook for 2 or 3 minutes. Add the wine and cook for 2 or 3 minutes. Add stock and simmer partially covered for 1 hour. Put soup in oven proof bowls. Add croutons and cheese; put under broiler until cheese melts. 10/08 Used diced fontina cheese and home made croutons. Excellent. 3/15/09 changed from 6 servings to 4.
