Chicken & Peach Stir Fry **** 7/97

1 1/3 cup uncooked couscous
1/4 cup orange juice
1/4 cup honey
2 teaspoon cornstarch
1/2 teaspoon ginger
1/2 teaspoon curry powder
1/4 teaspoon paprika
1/4 teaspoon pepper
2 tablespoon oil
1 lb chicken breast; sliced 1/4
1 bell pepper, sliced
1 onion; sliced
2 peaches, peeled, sliced
Cook couscous as directed on package. Set aside. In a small bowl, combine honey, orange juice, cornstarch, ginger, curry powder, paprika, and pepper; blend well. Set aside. Heat oil in a wok over medium hight heat until hot. Add chicken; cook 4 to 5 minutes or until browned, stirring occasionally. Add bell pepper and onion; cook and stir four to five minutes or until chicken is no longer pink and veggies are crisp tender. Stir orange juice mixture until smooth. Add orange juice mixture and peaches to skillet; cook and stir 2 to three minutes or until sauce is thickened and bubbly. Serve over couscous.
