Zesty Poached Eggs **** 2/96

4 eggs; poached
2 english muffins; toasted
1 cheese sauce: recipe below
1 salsa
2 1/4 ham slices ----CHEESE SAUCE***************----
2 tablespoon butter
2 tablespoon flour
3/4 cup milk
3 oz velveeta: cubed
1/4 cup beer
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon cayenne pepper

For the cheese sauce, melt butter; blend in flour. Gradually stir in milk. Cook over medium heat, stirring constantly until mixure thickens. Add cheese, beer, salt, dry mustard, and cayenne pepper. Cook and stir until cheese melts and mixture is smooth. Split English muffins and toast them. Split ham into four pieces and put on English muffin. Put poached eggs over ham, then cheese sauce to taste and salsa to taste.

Yield: 2 servings
