Split Pea Soup 12/98

3/4 cup dried split peas
1 onion; quartered & sliced
1 tablespoon bacon fat
1/2 lb cooked ham, diced
1/4 teaspoon celery salt
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup evaporated milk
1/2 cup water
Soak peas overnight in 2 cups of cold water. In morning, drain off water & rinse peas. Saute the onion in the bacon fat in a saucepan. Add peas, celery salt, salt, pepper, and 1 1/2 cups water. Cover, bring to a boil, reduce heat and simmer until peas are temder. This could take anywhere from 45 minutes to several hours, depending on the peas. Add ham during the last 30 minutes of cooking. When done, heat the milk and water and add to the soup. Heat well and serve.
