Skillet Pork Chops with Potatoes and Onion #892 7/08

2 tablespoon vegetable oil
4 pork chops
1/2 cup flour
1/2 cup parmesan; grated
1/2 teaspoon Salt
1/4 teaspoon pepper
pork chop spices; to taste
1 1/2 lb yukon gold potatoes; sliced thin
1 large onion; sliced
3 cubes beef bouillon
3/4 cup hot water
1 tablespoon lemon juice

Coat both sides of pork chops with the spice mix. Rubbing it in. Dredge chops in the flour. In a large skillet over medium high heat, brown the chops on both sides. Remove chops from skillet and saute the onions in the same skillet. Remove the onions when done. Put chops back in skillet. In a small bowl, mix parmesan cheese, salt and pepper. Sprinkle half of this mixture on the chops. Layer on the potatoes. Sprinkle with remaining parmeson mixture. Top with onion slices. In a small bowl, dissolve the beef bouillon cubes in the water. Stir in the lemon juice. Pour over the chops and potatoes. Cover skillet, reduce heat and simmer for about 45 minutes to 1 hour or until chops are tender.
