Sausage, Peppers, and Onions #908 2/09

1/4 cup olive oil
1 lb sweet Italian sausage
1 large red bell pepper; sliced
1 large green bell pepper; sliced
1 medium yellow onion; sliced
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
1/2 teaspoon oregano
1 teaspoon basil
4 large garlic clove; finely chopped
2 tablespoon Tomato paste
1 cup marsala wine
1 15 oz can chopped tomatoes; partially drained
1/4 teaspoon red pepper flakes
4 sandwich rolls or buns

Heat the oil in a large skillet over medium heat. Add the sausage and fry until browned, about 7 to 10 minutes. Remove from pan. Cool, slice, and then refry them on both sides. Remove from pan. Add peppers, onions, salt and pepper to pan and cook about 5 minutes. Add oregano, garlic and basil and cook 2 more minutes. Add the tomato paste and stir. Add marsala wine, tomatoes, sausage, and chili flakes. Stir to combine; bring to a simmer. Cook until the sauce has thickened; 20 to 30 minutes. Hollow out the rolls or buns. Fill with the sausage mixture. 10/9/10 Served this over spaghetti with some parmesan over top. Also had some garlic bread with it. Very good.
