Sausage and Pepper Frittata #930 10/09

1/2 lb Italian Sausage
1 large red or Green bell pepper; 1 inch dice
1/2 cup grated parmesan cheese
6 large eggs; beaten with 2 TB water
salt and pepper to taste

Remove sausage from casing and saute in a pan with a little olive oil. Add the peppers and saute until soft. In a bowl, add the parmisan to the beaten eggs and season with salt and pepper. Put peppers, sausage, and egg mixture into a 7 1/2 inch iron skillet. Heat mixture, stirring, over medium high heat until eggs are set on the bottom and sides of the pan. Place pan in a 350°F oven for about 10 minutes or until the eggs are cooked through. Remove from the pan and cut into wedges. Serve hot or at room temperature. 2/4/10 Next time try adding a teaspoon of prepared mustard to this.
