Pork and Hominy Chili #862 10/07

2 tablespoon canola oil
1 lb pork tenderlon; cubed
1 medium onion; chopped
3/4 cup bell pepper; chopped
3 cloves garlic; minced
1 tablespoon chili powder
2 teaspoon cumin
1/4 teaspoon Salt
1/4 teaspoon pepper
1/8 teaspoon cayenne
4 oz Tomato paste
1 15 oz container golden hominy; partially drained
1 14.5 oz can diced tomatoes
1 14 oz can chicken broth
1/4 cup sour cream
Heat oil in a dutch oven over medium high heat. Add pork to pan; Saute 5 minutes or until lightly browned. Add onion, bell pepper, and garlic to pan; Saute 5 minutes or until tender. Stir in chili powder and next 4 ingredients (through cayenne). Cook 1 minute. stirring constantly. Stir in tomato paste, hominy, tomatoes, and broth; bring to a boil, reduce heat, and simmer for 30 minutes. Serve with sour cream.
