Piggy Pudding #752 8/05

1 lb link pork sausage
4 medium apples; peeled and thinly sliced
1 7 1/2 oz pck yellow cornbread mix
maple syrup for serving
1 7 oz Shoe peg corn
shredded cheddar cheese
Cook sausage in a skillet until done; cut into 1 inch pieces and arrange in an 8 inch square baking dish. Layer sliced apples on top. Spread shrerdded cheddar over the apples. Mix batter according to package directions and add the corn to it.Pour corn bread batter over all and bake at 400°F for about 35 minutes or until corn bread is done. Serve with warm maple syrup.. Might want to explore making an impossible pie also. November, 05 addendum. Try sauteing the apples in about 1/2 stick of butter and 1/2 cup of sugar until carmelized, then add some water and cook down until the apples are tender. You will have a little syrup to add also.
