Dilled Cucumbers With Tomatoes **** 7/97

1/3 cup olive oil
3 tablespoon balsamic vinegar
1/2 teaspoon dried dill weed
1/2 teaspoon salt
1/2 teaspoon sugar
1 dash pepper
1 cucumber, thinly sliced
3 large tomatoes, sliced
Combine oil, vinegar, dill, salt, and sugar in a medium glass bowl; whisk until well blended. Add cucumber slices and toss until all are coated. Cover and chill at least 3 hours. Arrange sliced tomatoes on individual plates. Spoon cucumber mixture over tomatoes and serve.
Yield: 6 servings
