3 tablespoon butter
1/2 onion; chopped
3 tablespoon flour
1 cup milk
1/2 cup beer
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon nutmeg
1/8 teaspoon cayenne pepper
1/4 cup shredded cheddar
1/4 cup parmesan cheese
4 slices toast
1/2 lb sliced deli turkey breast
1/2 lb bacon; cooked & crumbled
1 1/2 cup mushrooms; sliced & sauted
Melt butter in a saucepan. Saute onion in butter until transparent. Add flour; mix well. Stir in milk, beer and spices; whisk until smooth. Cook over medium heat until sauce thickens, stirring occasionally. Add cheddar cheese and parmesan cheese; continue cooking until cheeses are melted and blended with sauce. Remove sauce from heat. Put one slice of toast in each of 2 oven proof individual serving dishes. Top each peace of toast with slices of turkey. Cut remaining toast slice diagonally and place two triangles alongside each sandwich. Ladle cheese sauce equally over both sandwiches. Place dishes under broiler until sauce begins to bubble and turn brown, about two minutes. Garnish with crumbled bacon and sauted mushroom slices.
