Impossible Bacon Cheeseburger Pie ****1/2 11/95

1 lb ground beef
1 1/2 cup chopped onion
1/4 teaspoon pepper
1/2 teaspoon salt
2 cup shredded cheddar
1 1/2 cup milk
3 eggs
3/4 cup bisquick original baking mix
2 tomatoes; sliced
1/2 lb bacon; cooked & crumbled

Heat oven to 400 degrees. Spray Pam on a 10" pie plate. Cook bround beef & onion in a 10" skillet, stirring, until beef is brown; drain. Stir in salt & pepper; spread in pie plate. Sprinkle with one cup of the cheese. Beat eggs slightly; add milk and baking mix and beat for about a minute. Pour into pie plate. Bake 25 minutes. Top with tomatoes, cheese and bacon. Bake 5 to 8 minutes longer or until knife inserted in center comes out clean. Cool for five minutes. Sausage could be substituted for the ground beef. Then you would probably eliminate the salt.
