Houlihan's Baked Potato Soup 6/00 #518

2 baking potatoes
1/3 cup butter
1/3 cup flour
3 cups milk
1/4 teaspoon salt
1/4 teaspoon white pepper
2 green onions; chopped & divided
6 slices bacon, cooked & crumbled; divided
1/3 teaspoon nutmeg
3/4 cups shredded cheddar; divided
1/2 cup sour cream
Preheat oven to 350 degrees. Wash potatoes, pat dry, cover with oil, sprinkle with salt and bake for one hour. Let cool and dice into 3/4" cubes. Leave the skin on if desired. Melt butter in a saucepan over low heat; add flour, stirring until smooth. Cook one minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until mixture thickens and is bubbly. Add potato, salt, pepper, 1 TB. green onion, 1/4 cup bacon, nutmeg, and 1/4 cup cheese. Cook until thoroughly heated, and stir in sour cream. Add extra milk, if necessary for desired consistancy. Serve with remaining onions, bacon and cheese.
