Chicken Fried Steak **** 8/92

1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
4 each tenderized (cubed) steaks
1 each large egg; slightly beaten
2 tablespoon milk
1 cup saltine cracker crumbs
1 single vegetable oil
3 tablespoon flour
1 1/4 cup chicken broth
1/2 cup milk
1 dash worcestershire sauce
1 dash louisiana hot sauce
1 dash kitchen bouquet

Combine first 3 ingredients; sprinkle on both sides of steaks. Combine egg and 2 Tbs. milk in a shallow dish. Dip steaks in egg mixture; dredge in cracker crumbs. Pour oil to a depth of 1/2 inch into a large, heavy, skillet. Fry steaks in hot oil over medium heat until browned, turning once. Remove steaks and drain on paper towels. Keep warm. Drain off drippings, reserving 3 Tbs. in skillet. Add 3 Tbs. flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add broth and 1/2 cup milk; cook over medium heat until thickened and bubbly. Stir in remaining ingredients. Serve gravy with steaks and rice or potatoes. I would strongly urge you to buy the steaks at a meat market. Why ruin a good meal with factory made cube steaks?
