Cheesy Potato Casserole **** 8/92

2 lb potatoes; about 7 medium
1/4 cup butter; melted
1 each small onion; chopped
1 teaspoon salt
1/2 teaspoon pepper
8 oz sour cream
10 3/4 oz can cream of chicken soup
8 oz shredded cheddar cheese
1/4 cup butter; melted
1 1/2 cup herb seasoned stuffing mix

Peel and chunk up the potatoes; cook for about 25 minutes or until tender. Drain. Combine 1/4 cup melted butter and next 5 ingredients in a large bowl; gently stir in the potatoes and cheese. Spoon into a lightly greased 9 X 13 X 2 inch baking dish. Combine 4 Tbs melted butter and stuffing mix; sprinkle over potato mixture. Bake, uncovered, at 350 for 25 minutes or until heated through.

Yield: 8 servings
