Carmelized Sweet & Sour Onions **** 11/93

1 lb pearl onions
2 tablespoon salad oil
2 tablespoon sugar
3/4 teaspoon salt
1 cup water
1/2 cup red wine vinegar

Boil onions for about 3 minutes. This will make them easy to peel. Just cut the root end off and pop the onion out. In a saucepan over high heat, heat onions oil, sugar, salt and water to boiling. Reduce heat and cook until onions are tender. Increase heat to high and cook, stirring gently until liquid evaporates. Stir in the vinegar and cook, stirring, until mixture thickens slightly and onions are browned, but not burned.

Yield: 4 servings
