Baked Ziti #569 4/01 Final 11/06

4 oz ziti
1 onion; chopped
3 galic cloves; minced
1 lb sweet italian sausage
2 tablespoon vegetable oil
1 14 1/2 oz. can tomatoes crushed in puree
1 6 oz can tomato paste
1/2 cup water
1 1/2 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon pepper
8 oz ricotta cheese
1 egg; slightly beaten
1 cup shredded Mozzarella cheese
1/2 cup shredded parmesan cheese

Bring a pot of salted water to a boil. Add some oil and boil ziti for 12 minutes. Drain and set aside. Preheat oven to 325 degrees. Spray a 2 Qt. casserole dish with Pam. In a large skillet, over medium heat, saute the onion, garlic, and Italian sausage in the oil, stirring constantly, until sausage is browned; drain. Stir in the tomatoes, italian seasoning, tomato paste, water and pepper flakes. Cook for about 10 minutes or until the onions are soft. Season wth salt and pepper to taste. In a small bowl, blend together the egg and ricotta cheese until smooth. Place the drained pasta in an even layer in the prepared baking dish. Mix in about 1/2 of the sauce. Cover with the ricotta mixture and top with the remaining tomato mixture. Sprinkle with the parmesan. Bake uncovered for about 30 - 40 minutes or until golden brown and bubbly. Let stand for 5 minutes before cutting and serving. Add mozzarella during the last fifteen minutes. 11/06 Changed recipe to 1 lb. sausage instead of 1/2 lb.
