Baked Pork Chops #756 8/05

4 medium pork chops
olive oil cooking spray
2 large eggs; beaten
1 cup Italian Bread Crumbs
1 tablespoon herbs de Provence
1 cup flour
Salt
Spray a roasting pan and cooking rack with the spray. Place beaten egg in a shallow bowl, place flour on a plate and place bread crumbs mixed with herbs de Provence on another plate. Sprinkle salt on both sides of chops. Dredge pork chops in flour. Dip in egg and then in bread crumb mixture, coating the pork evenly all over. Arrange chops on a rack in the prepared pan and coat lightly with the cooking spray. Bake for about 45 miutes at 350°F . Serve with the sweet potatoes and pears, #757. 1/20/09 Omitted the cooking rack and just put them on some non stick tinfoil. Came out great.
