Amaretto Chicken **** 3/96

4 chicken breasts
1 boned & skinned
1/2 cup flour
2 teaspoon seasoned salt
1/2 teaspoon white pepper
4 tablespoon butter
1/2 cup amaretto
2 cup fresh mushrooms; sliced
1/4 cup sliced almonds; toasted
1 success wild grain rice ----AMARETTO CREAM SAUCE----
1 cup whipping cream
1/4 cup amaretto
1 tablespoon brown sugar

Combine flour,salt, and pepper in a small bowl. Dredge the chicken in flour mixture and saute in two Tb. butter until cooked thoroughly and well browned. Pour Amaretto into saucepan and flambe. Reduce heat to simmer and cook until sauce thickens. Remove from heat. Saute mushrooms in remaining 2 Tb. butter in a separate pan over medium heat until browned. Prepare rice according to package directions. Put a serving of rice on each plate, then a chicken breast; top with mushrooms and almonds. Serve with Amaretto sauce.

Amaretto Sauce Blend all ingredients in a small saucepan. Bring to a boil, reduce heat and simmer until thick and bubbly, about ten minutes. Pour into pan with the chicken and stir to mix all the pan bits and sauces.

Yield: 4 servings
