Acorn Squash With Sausage #608 2/02

1 medium acorn squash
Salt
1/2 lb sausage
2 tablespoon brown sugar, or maple sugar; divided
4 teaspoon Butter; divided
Cut squash in half lengthwise, and remove seeds; sprinkle with salt. Place cut side down in a shallow baking dish, and add 1/2 inch boiling water. Bake uncovered, at 375°F for 45 minutes; drain. Cook sausage in skillet over medium heat until browned, stirring to crumble. Remove from heat; drain. Place 1 tablespoon brown sugar and 2 teaspoon butter in each squash cavity. Spoon sausage into squash halves. Bake uncovered for 15 minutes or until squash is tender. You could substitute butternut squash for the acorn if you like. Just adjust the cooking time and perhaps add a little more butter and sugar.
