Elegant Chicken Hollandaise **** 8/96

4 chicken breasts; boned
1 egg white; lightly beaten
1 cup seasoned bread crumbs
1/4 cup butter; melted
2 10 oz frozen spinach,
1 cooked and drained
1/2 cup sour cream
1 hollandaise sauce
Dip breasts in egg white, then bread crumbs. Melt butter in baking dish and arrange breasts in dish. This can be done a day ahead. Bake for 35 minutes at 350 degrees. Shortly before serving, mix the spinach with sour cream and warm it up in a saucepan. Make a nest of the spinach on each serving plate and arrange cooked chicken breasts on top. Spoon Hollendaise sauce on top of each.
