Italian Casserole *** 5/93

1 lb ground beef
1 small onion; chopped
2 8 oz. cans tomato sauce
1 teaspoon parsley
1/2 teaspoon oregano
1 teaspoon basil
1/2 teaspoon salt; divided
1/4 teaspoon pepper
2 pkg frozen chopped spinach
2 cup ricotta cheese
8 oz mozzarella cheese; sliced

Brown ground beef and onion. Drain off fat. Stir in tomato sauce, parsley, oregano, basil, 1/4 ts. salt and pepper. Simmer uncovered, for ten minutes, stirring occasionally. Meanwhile, combine spinach, ricotta cheese and remaining salt. Spoon spinach mixture around edges of 13 X 9 X 2 baking dish; pour beef mixture into center. Cut each Mozzarrella slice into 3 strips and arrange in a lattice pattern over the meat. Bake at 375 for 25 minutes.

Yield: 8 servings
