Ham Croquettes **** 7/96

1 lb cooked ham; chopped
8 1/2 oz can creamed corn
1 small onion; chopped
1 egg; slightly beaten
2 tablespoon parsley
1/2 teaspoon pepper
3/4 cup dry bread crumbs; divided
2 tablespoon corn meal
3 tablespoon oil; divided
1 each red, yellow, green, pepper
1/4 teaspoon salt
3/8 cup sour cream
3/8 cup mayonnaise
1 1/2 teaspoon lemon zest
1 1/2 teaspoon tarragon
3/4 teaspoon dijon mustard

In a bowl, mix first six ingredients with 1/2 cup of the bread crumbs. Form into 6 patties. Mix remaining crumbs with cornmeal; coat patties with cornmeal mixture. In skillet heat 1 Tbs. of the oil over medium heat. Add pepper slices and salt; cook until softened, six minutes. Remove; keep warm. Add remaining oil to skillet. Add patties; cook until browned, about 4 minutes per side. Reduce heat to low; cook until heated through. Mix sour cream, mayo, zest, tarragon, and mustard. Serve over croquettes and peppers.

Yield: 6 servings
