Stuffed Peppers For Two #591 10/01

2 medium green peppers
1/2 lb ground beef
1 16oz. can tomato sauce; divided
1/4 cup uncooked instant rice
3 tablespoon shredded cheddar; divided
2 tablespoon chopped onion
1/2 teaspoon worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg; beaten

Cut tops off peppers and discard; remove seeds and ribs. In a bowl, combine beef, 1/4 cup tomato sauce, rice, 2 Tb. cheese, onion, Worcestershire sauce, salt, pepper, and egg; mix well. Stuff the peppers; place in an ungreased 2 qt. casserole. Pour the remaining sauce over the peppers. Cover and bake, covered, at 350°F for 60 minutes or until meat is no longer pink and peppers are tender. Sprinkle with remaining cheese (or more) and return to the oven for five minutes or until cheese is melted. If you like more gravy, add another half a can of tomato sauce.
