Dutch Pancakes W/ Spicy Apples **** 3/96

6 eggs
1 cup flour
2 tablespoon sugar
1 cup milk

1/4 cup butter
1 tablespoon cornstarch
2 tablespoon cold water
1/3 cup brown sugar
1 teaspoon cinnamon
3 red apples; cored & sliced
1/2 cup sour cream
3 tablespoon powdered sugar
For the pancakes, beat eggs and mix with remaining ingrredients. Spray a 10" round pie dish with Pam and pour in mixture. Bake at 400 for 15 minutes. Reduce heat to 325 and bake 45 minutes longer. Remove immediately and cut into wedges. Top with spicy apples. For the topping, melt margarine in a skillet and add mixture of cornstarch and water, brown sugar and cinnamon. Cook and stir until thickened. Add apples and cook until tender crisp. Spoon over pancakes. Combine sour cream and powdered sugar. Add a dollop to each serving. Serve with sausage patties.
