1/2 lb bacon; cooked and crumbled
2 tablespoon Butter; melted
1 3/4 cup croutons
1 cup shredded cheddar cheese
3 large eggs
7/8 cup milk
1/2 bell pepper; diced
1 1/2 teaspoon dijon mustard
salt and pepper to taste
fruit; to have with
Preheat oven to 325°F. Melt butter in a small pan. Spray an 8 X 8 inch baking dish with Pam. Place croutons in bottom of dish and drizzle with melted butter. Sprinkle with the cheddar cheese. Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until blended. Pour over the croutons and cheese and sprinkle with the crumbled bacon. Bake for 40 minutes. Remove from the oven and allow to stand for ten minutes before serving. Serve this with some canned fruit.
