Spinach Casserole 11/99

2 eggs; well beaten
6 tablespoon flour
10 oz frozen chopped spinach
12 oz cottage cheese
1 1/2 cup cheddar cheese; grated
1/2 teaspoon salt
1/2 cup grape nuts
2 tablespoon butter; melted

Thaw spinach and squeeze dry. Preheat oven to 350 degrees. Beat eggs and flour in a bowl until smooth. Stir in spinach, cottage cheese, cheddar cheese, and salt; mix well. Pour into a greased 1 qt. casserole. Mix butter and grape nuts; spread over top of spinach mixture. Bake for about 45 minutes, or until golden and puffy. 10/09 Suggest get a new topping instead of grape nuts and reduced baking time to 45 minutes.

Yield: 6 servings
