5 lb figs, cleaned, remove stems; chopped
2 quart water; boiling
5 lb sugar
1 cup thin lemon slices; chopped
2 tablespoon cinnamon

Soak figs in boiling water for 15 to 20 minutes. Drain, retaining 3 cups of the water. Let cool. Combine sugar and the 3 cups of water; boil to make a thick syrup, 20 to 30 minutes. Add lemon and cinnamon; stir. Add figs and cook over low heat for 1 hour, stirring frequently. Either can these or freeze them.
