Smoke House Short Ribs #924 8/09

2 tablespoon olive oil
4 boneless beef short ribs
salt and pepper
1 large onion; thickly sliced
1 16 oz baby carrots
2 stalks celery; thickly sliced
1 teaspoon garlic; minced
2 teaspoon smoked paprika
2 teaspoon black pepper
1 1/2 teaspoon seasoned salt
1 cup red wine
1 10.75 oz.can beef stock
Heat olive oil in a saute pan over high heat. Season ribs with salt and pepper. Sear ribs on all sides until brown and caramelized. In the bottom of a crock pot, place the onions, carrots, celery, and garlic. Then add paprika, pepper and seasoned salt. Pour in wine and beef stock. Place short ribs on top of veggies. Cover and cook on high for 4 hours. Serve with veggies and sauce over rice.
