Creamed New Potatoes #917 6/09

1 1/4 lb unpeeled new red potatoes; halved or quartered
1 teaspoon Salt
1 8 oz Pkg cream cheese; cubed
1/2 cup buttermilk
3 green onion; sliced
3/4 teaspoon thyme
1/2 teaspoon tarragon
1/2 teaspoon salt or to tastte
1/4 teaspoon pepper

Place potatoes in a saucepan and cover with water; add salt. Bring to a boil. Reduce heat and simmer for 20 minutes or until tender. Meanwhile in another saucepan, combine the cream cheese and buttermilk; cook and stir over medium heat until cheese is melted and mixture is smooth. Remove from heat; add onions, thyme, tarragon, salt, and pepper. Taste test this as you may have to add a little more salt too. Drain potatoes and add the cream sauce and toss to coat.
