Whipped Sweet Potatoes #913 4/09

2 large sweet potatos; scrubbed
salt and pepper
1 cup heavy cream
1 teaspoon bay leaves
1/4 teaspoon Cinnamon
pinch freshly grated nutmeg
1 tablespoon brown sugar
1 tablespoon Butter
1/3 large orange; just the zest

Preheat oven to 350°F. Prick the sweet potatoes with a fork, drizzle with olive oil and season with salt and pepper. Put them in a roasting pan and roast for 1 hour until they are very soft. Set aside until cool enough to handle. In a small saucepan over low heat, heat the cream and bay leaf to a low simmer; keep warm until ready to use. Scoop the flesh of the potatoes into a food processor. Season to taste with salt and pepper. Add remaining ingredients and pulse until smooth. Just go ahead and eat the skins before supper.
