Maple-Candied Bacon #912 4/09

1 lb thick sliced bacon
1/2 cup maple syrup Grade B
1 teaspoon dijon mustard
finely ground black pepper
Preheat oven to 400°F. Line a baking sheet with heavy foil. Place a baking rack over the lined sheet tray and arrange the bacon slices across the rack, not overlapping. In a small bowl whisk the syrup and mustard. Generously spoon over the top of the bacon, and bake for 15 minutes. Turn the bacon over and baste with the syrup mixture. Bake for an additional 10 minutes or until the bacon has reached the desired crispness. Sprinkle hot bacon with finely ground black pepper. Let rest on the rack for 5 minutes. This was good with french toast. Would also make a greasy appetizer. Be sure to use Grade B syrup. May have to get it at a health food store.
