Baked Mashed Potatoes with Parmesan & Mozzarella 4/09 #511

2 baking potatoes
1/2 cup milk
1/2 stick Butter; melted
3/4 cup mozzarella cheese; grated
1/2 cup parmesan; grated
2 tablespoon dried bread crumbs
salt and pepper
Preheat oven to 400°F. Spray an 8 X 8 baking dish with Pam. Peel the potatoes and cut into 1 inch cubes. Cook them in a pot of boiling, salted water until they are tender, about 15 minutes. Drain, return to the same pot and mash well. Mix in the milk and butter. Mix is the mozzarella and 3/4 of the parmesan. Season to taste with the salt and pepper. Transfer to the baking dish. Stir the bread crumbs and remaining parmesan in a small bowl to blend. Sprinkle mixture over the mashed potatoes. Recipe can be prepared up to this point 6 hours ahead of time: cover and chill. Bake uncovered until the topping is golden brown, about 20 minutes.
