Creamy Cheese Potato Casserole 10/98

1 lb crinkles or ranch fries
1 can cream of mushroom soup
1 onion; chopped
6 oz velveeta; cubed
1/4 lb bacon; cooked & crumbled
3/4 cup miracle whip
1 cup grapenuts
1/4 cup pecans; chopped
1/4 cup butter; melted
Cook bacon, remove from pan and saute onion in about 1 TB. of remaining bacon fat. Add soup and cheese; cook until cheese is melted; stir in Miracle Whip. Fold in thawed potatoes and bacon. Put into a casserole. Mix together the grapenuts, butter and pecans. Arrange on top of the casserole. Bake at 350 for about 45 minutes.
